Super mom..super food

Wow! Talk about jump starting your day.... I overslept this morning. Woke up at a wonderful 7:26, leaving me a whopping 4 minutes to get 3 girls up and 2 girls ready. I jump out of bed, thankful that Sarah decided to put her school clothes on last night, I throw her a banana and run down the hall to wake the others. We spend half of our preciouse time digging through baskets of unfolded laundry(yeah, still putting THAT off) searching for the much needed socks. Brushing hair on the way out the door where the preschool bus is waiting for Sarah who still has no shoes on. So I get her shoes on her in the driveway and onto the bus she goes. Now for Jessica who is trying to get her shoes and socks on herself on the porch with a totaly unkept mop of hair that needs a brush. So we git er done in record time and here comes the grade school bus... off to school they go... whew! now I need to pee while the coffee gets started....

wich brings me to breakfast and last nights late night guilt free snack...



I am posting this recipe for my momma, but anyone is welcome to it...



super yummy crust...

1/2 C walnuts

1/2C pecans

about 10 dates

1/2 tsp. cinnimon

1 tblsp coconut oil



chop nuts realy well, you can use a blender or food proccessor to get them the texture of graham cracker crumbs. add cinnimon, separate about a 1/4C of nuts for topping, set aside



chop dates until they are olmost a smooth thick pasty texture (a food proccessor would have been realy handy for this, however I dont have one so I did it by hand)



add coconut oil and nuts to dates, I mixed everything together on the counter so that I could cut and kneed it all easier, but if you have a food proccessor, just put it all in there and mix until well blended



once well mixed press into bottom of small baking dish or plate, whatever works for you realy, I made my crust about 1/4" thick then refrigerate for a few minutes while you cut your peaches, however many you want.



what I did is this as I am the only one eating it in my home...I cut my crust into 6 squares, when I want some, I took one square and one peach then topped with a tsp of nuts and a dash of cinnimon. This recipe is raw, vegan, and gluten free... also guilt free for those of us not wanting extra weight and still wanting sweets... hope you enjoy, honestly, i have never had such yummy peach cobbler before...
